Apple, Sausage and Sage Stuffing

As far as I am concerned, a Roast is not complete unless it has some good quality stuffing to go along with it. This apple and sage stuffing will outshine anything you have had before. The sausage meat gives it a juicy pork flavour, the apple a subtle sweetness and the butter fried onions with fresh herbs give it a mouth-watering depth of flavour that will seriously raise your roast game. Give it a try, you will not be disappointed!

Serves: 8 - 10 people (as stuffing)
Ingredients
2 Large Onions, finely chopped
400g Sausage Meat
25g Butter
2 Tablespoons Rapeseed Oil
1 Apple, cored and diced (very small dice)
Handful fresh sage leaves, chopped (or dried sage if fresh leaves unavailable)
150g Breadcrumbs
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
200g mushrooms, diced (very small dice)
4 cloves garlic, chopped
Instructions
Heat a pot on a medium heat and add the butter and oil
When the butter is melted, add the onion & mushrooms and fry, stirring regularly until softened (about 4 - 5 minutes)
Add the sausage meat, garlic, sage leaves, apple, salt & pepper and fry, stirring regularly, until the sausage meat is cooked. (Break up the sausage meat with a wooden spoon while frying)
Add the breadcrumbs and stir through, the stuffing is now ready to go!
