Braised Red Cabbage

Braised red cabbage is one of my favourite side dishes to go with a roast. Cabbage is always a winner for me and this one is no exception. The secret here is to braise the cabbage for a long time on a low heat which gives it a melt in the mouth texture. The braising is done with cider and Apple cyder vinegar which gives it an amazing subtle sweetness that is hard to beat.
Prep Time: 5 minutes
Cooking Time: 95 Minutes
Serves: 4 - 6 people (as stuffing)
Ingredients
1 Whole Red Cabbage, finely shredded
2 onions, finely sliced into half rings
3 apples, cored and finely chopped
3 Tablespoons cider vinegar
500ml apple cider
50g butter
Salt and Pepper to taste
Instructions
Heat a pot on a medium heat and all of the ingredients
Bring to a boil then turn the heat down low, put on the lid and simmer for an hour and a half, stirring every 10 minutes or so. If the liquid evaporates and the cabbage starts sticking, add a little more cider
