Club Sandwich

The ubiquitous club sandwich is famous the world over, but it has somehow managed to elude me for 33 years, I recently tried one and can't believe I went so long without! I am amazed at how a few basic ingredients can come together to create something so magical, With 3 slices of bread, roast chicken, homemade mayonnaise, crisp fresh lettuce and tomatoes, this sandwich has ended up on a regular lunch rotation in our house. It really hits the spot and is even better when washed down with a nice cup of tea. I have cut the crusts off in the picture for aesthetic purposes but I actually think it is better with crusts on, but do what makes you happy!
Ingredients
3 slices of bread (white sliced pan is my favourite)
Mayonnaise (ideally home made, see my recipe here)
Butter
Roast chicken (I use leftovers from when we have a roast)
1 romane lettuce, sliced how you like
1 Tomato, thinly sliced
Prep Time: 5 minutes (15 mins total if you also have to make the mayonnaise)
Cooking Time: n/a
Serves: 1 Person
Instructions
Lightly toast the bread slices and let them cool down before buttering
Butter one side of each slice, then add the mayonnaise
Add the roast chicken, lettuce and tomato to two of the slices and sprinkle with a little salt and pepper, then assemble your sandwich
You can cut off the crusts or leave them on, do what you makes you happy!
