Cucumber Raita

When having a spicy curry, sometimes it just needs something creamy and fresh to balance it out, and Cucumber Raita is the perfect dish to do just that! This yoghurt based sauce provides the perfect counterpoint to a very spicy curry, and will really up your game on your next curry night. It combines cucumber, mint, yoghurt and onion to make an absolutely delicious side dish. It is also great for dipping poppadoms in.
Ingredients
1/3 Cucumber
250ml plain yoghurt
1/2 onion, finely sliced
2 sprigs fresh mint, finely chopped
pinch of salt and pepper
Pinch Chaat masala (optional, for garnish)
Prep Time: 5 minutes
Cooking Time: n/a
Serves: 2 - 4 people (when served as a side dish with a curry)
Instructions
Whisk the yoghurt in a bowl, grate in the cucumber (use the big holes on a grater), add the onion, min, salt & pepper and mix through
Garnish with a sprinkle of chaat masala, as well as being a nice garnish, this will also give the raita a little bit of zing
