Grilled Sea Bass with Garlic Butter Sautéd French Beans

Good Friday is traditionally a day to eat fish in Ireland, and this year I decided to cook my favourite, Sea Bass. Give this recipe a try if you are looking for some inspiration. Great on Good Friday or any day of the year for that matter!
Sometimes with fish it’s better to go back to basics; oil, butter, garlic, salt and pepper. Keeping it simple is the key aim with this recipe, buy great quality produce and let it do the talking. Read the whole recipe before starting cooking, while the Sea Bass and beans are listed separately, try to cook them concurrently as you'll want to serve both when they are as fresh as possible.
Ingredients:
For the seabass
1 Whole Sea Bass, cleaned and gutted
Pinch of salt and pepper
2 garlic cloves finely
1 tablespoon rapeseed oil
1 lemon, cut into slices
Juice of another lemon
25g butter
For the French Beans
Pack of French beans
2 cloves garlic, finely chopped
Pinch of salt and pepper
25g butter
1 tablespoon rapeseed oil
Prep Time: 10 minutes (+half an hour of marinading)
Cooking Time: 15 Minutes
Serves: 2 people, scale up the recipe in equal proportions if you have more mouths to feed.
Instructions
For the fish:
Marinate the fish in the garlic, oil, lemon, salt and pepper for half an hour before cooking
When ready, turn the grill up to the highest setting
Place a layer of sliced lemon on an oven tray
Place the marinated fish on top of the lemon and put the butter on top of the fish.
you’ll want to put the fish under the grill about 10cm away from the heat source
Grill for 3-4 minutes on each side.
For the beans
Trim the ends from the beans if not already trimmed
Drop into boiling water for 2 minutes and drain
Heat the oil and butter on a high heat in a frying pan
Fry the beans and garlic for 3 or 4 minutes, giving a stir every so often then add the salt and pepper
Serve with the grilled sea bass
