Home Made Pesto



Simple, cheesy, herby, nutty and fresh; Pesto truly is the king of the condiments. For a large part of my life I bought the stuff in jars from the supermarket, but then I didn't know how much better freshly made pesto tasted, even less so how easy it is to make! All you have to do is chop and mix together some basic ingredients and you have one of the best tasting condiments there is. It can go with most savoury dishes and makes a great pasta sauce, all you have to do is mix it into your favourite type of pasta.


Ingredients

60g Basil Leaves (no stalks), very finely chopped

30g Pine nuts, lightly toasted in a dry pan and finely chopped (see photos)

30g Parmesan, finely grated

2 Cloves of Garlic, finely chopped

1 Red chilli, finely chopped

4 Tablespoons rapeseed oil (or olive oil but only if you have the good stuff, don't use cheap olive oil for this or it will spoil the taste)

Small pinch of salt


Prep Time: 15 minutes

Cooking Time: n/a

Serves: Depends on how much you want to eat, this will make enough to add to pasta for about 8 people


Instructions

  1. This has to be the easiest recipe we have put up, just mix all the ingredients together and it is ready to eat! Only add a little bit of salt, then taste and add a little more if it needs it.
