Homemade Potato Salad with Spring Onion, Chives & Parsley

This is my homemade potato salad recipe that will beat anything you can get in the supermarket. The spring onions, chives and parsley give it a depth of flavour that really complements the smooth taste of the mayonnaise. It is perfect for barbeques and also great for putting in sandwiches or baguettes with a bit of ham too (one of my favourite lunches in my schooldays!). It is a simple recipe and doesn’t take long to make.

Cooking Time: 30 Minutes
Serves: 8 people, as a a side
Ingredients
2.5kg Potatoes
Small bunch fresh parsley, finely chopped
Small bunch fresh chives, finely chopeed
Small bunch of spring onions, very finely sliced
500g Mayonnaise, jarred is fine, you can make your own if really ambitious
½ teaspoon salt
1 teaspoon pepper
Wash and peel the spuds, boil them in water until cooked. They are cooked when you can easily break one in half with the blunt edge of a butter knife.
Drain and wait until cool, you can rinse them under water to speed up theprocess.
Cut the potatoes into 2.5cm cubes, put in a large bowl and add the rest of the ingredients.
Mix well and it is ready to serve!
It will last a few days in the fridge if you don’t eat it immediately
