Kachumber Salad is a refreshing and light side salad from India. It is the perfect accompaniment to a curry or anything really, it doesn't really have a specifically Indian flavour so you can serve it with anything that would normally go with a side salad. I think it goes especially well with a piece of pan fried fish.
1 medium onion
1/2 a cucumber
2 handfuls of cucumber
Flaky Sea Salt
Prep Time: 5 minutes
Cooking Time: n/a
Serves: 4 people as a side salad
Slice the onion into very thing half rings
Halve the cucumber lenghtways, scoop out the seeds with a teaspoon and slice into half rings
Quarter the tomatoes, remove the cores and cut into slices
Roughly chop the coriander
Combine all of the above ingredients in a bowl along with a good pinch of flaky sea salt and the juice of the lime
Serve and enjoy!
