This is a delicious vegan salad that is perfect for a warm summers evening, it has a great depth of flavour which makes it perfect as a stand-alone dish. It also works well as a side, just serve in smaller portions. It is healthy, colourful and also quick and easy to make. Having a machine to matchstick the veg will make this much easier but a knife works quite well too (that’s what I used), just be careful to keep the veg nice and thin.
Serves: 4 People
Prep time: 20 minutes
Cooking time: none, just throw it all together!
For the salad:
1 beetroot, julienned (matchsticked)
1 fennel, finely sliced
6 small carrots, julienned (matchsticked)
Handful chives, finely chopped
Handful parsley, finely chopped
4 oranges, segmented (see pictures)
For the dressing:
2 table oil
2 table mustard
2 limes (just the squeezed juice)
1/2 teaspoon salt
1 teaspoon pepper
2 tablespoon honey
Mix the salad ingredients in a bowl.
Mix the dressing ingredients together with a whisk.
Add the dressing to the salad, mix well with your hands and serve!
