Rocket, Basil and Feta Salad

This healthy salad combines a basil paste, toasted pistachio nuts, crumbled feta, pearl barley and rocket to create an incredible tasting salad. This one is on regular rotation in our house, because as well as being amazingly tasty and refreshing, it is also very filling. If you like pesto, then you will love this salad. While technically not pesto, it does have a bit of a pesto vibe. This dish is good enough to be a standalone main course but you can also make it as a side (be warned though, it will probably end up being the star of the meal!)
Ingredients
200g Pearl Barley
30g Basil
2 Garlic Clove
2 Tablespoons Rapeseed Oil
60g toasted pine nuts
4 handfuls rocket
100g feta, crumbled
salt flakes to taste
Pepper to taste
Prep Time: 10 minutes
Cooking Time: 35 minutes (also need to cook the steak)
Serves: 4 people as a main
Method
Get a large pot of salted boiling water, add the pearl barley and boil for 30 minutes, until soft but with a bit of bite
In the meantime crush the basil in a mortar and pestle, along with the oil and a little salt and pepper until a fine paste
Toast the pine nuts in a dry pan until lightly browned
Once the pearl barley is finished, drain and cool under cold running water
Shake off any excess water and combine in a bowl with the basil paste, toasted pine nuts, rocket, feta and salt and pepper to taste
