Sautéed Courgettes


We love some fresh courgettes in our house, especially ones we have grown ourselves. This is a simple and quick recipe to bring out the best of flavours in this humble vegetable. It goes really well with just about anything, but especially chicken and fish. Try to use fresh oregano if you can, it still works well with dried but using the fresh herb takes it to another level. None of the shops in Catford seem to sell it so we grow it in our herb garden.


Ingredients

2 or 3 Courgettes (about 500g total)

3 tablespoons rapeseed oil

2 cloves garlic, finely chopped

salt and pepper

1 teaspoon chopped fresh oregano (can use dried if you have to but use less)


Prep Time: 5

Cooking Time: 20 minutes

Serves: 2 people as a side



Instructions

  1. Slice the courgettes into 5mm slices

  2. Heat a frying pan on a medium heat, when hot add the oil

  3. Add the garlic and fry until it turns a very light brown, then add the courgettes and oregano and stir

  4. Add salt and pepper to taste

  5. Turn the heat up to high and sautée the courgettes, stirring every couple of minutes until tender (don't go too far, you want them to have a little bit of bite), will take 5 - 10 minutes

  6. Enjoy!
