Spaghetti with Burnt Sage Butter

This is a quick and simple recipe which does not compromise on taste, perfect for a mid week after work feed. The Sage gives a fantastic flavour to the burnt butter, and the lemon juice really gives it some edge. This is a great treat, but shouldn't be eaten all the time as it is quite heavy on the calories! If you can't find Sage in your local area, it is very simple to grow and will be better than anything you can find in the shop.
Ingredients:
300g Dried Spaghetti or Linguine (or to make it even better make your own home made pasta!)
100g Butter
Handlful of fresh Sage, around 20 leaves
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
2 Lemons
100ml Stock
Grated Parmesan to taste
Prep Time: 15 minutes
Cooking Time: 15 minutes
Serves: 2 People
Instructions
Cook the Spaghetti according to the packet instructions.
While the Spaghetti is cooking, heat the butter on a medium heat with the Sage leaves until the butter turns a nutty brown colour, about 4 - 5 minutes. Remove the leaves from the butter and set aside for now.
Add the stock and the juice of one lemon to the butter and simmer for 1 minute.
The Spaghetti should be cooked at this point so drain, setting aside a cup full of the water.
Add to the pan along with the Salt & Pepper, give a good mix and dish up onto plates.
Top with Parmesan, the crispy Sage leaves and more Lemon Juice to taste.
