Stir Fried Vegetable Chow Mein

I have turned into a bit of a noodle-aholic of late, I don't know where it came from but I have been craving noodles constantly the last few weeks. After ordering several takeaways I decided to take matters into my own hands and figure out how to make noodles as good as my local take away. After a couple of attempts I figured out how to make them even better. If you are looking for amazing noodles, put down the takeawy menu and give these a try, you will not be disappointed!

Serves: 2 people
Ingredients
For the stir fry
100g Carrots, finely sliced lenghtwise and matchsticked
100g Broccoli, cut up into small pieces
200g Mushrooms, finely sliced
1/2 an onion, finely sliced
200g Egg Noodles (replace with non-egg noodles to make this dish vegetarian/vegan)
1 Tablespoon Rapeseed oil
Sesame Oil to serve
For the sauce
Soy sauce, 1.5 Tablespoons
Hoy Sin Sauce, 1.5 Tablespoons
Mirin, 1 Teaspoon
Sriracha Chilli Sauce, 1 Tablespoon
Instructions
Chop up all your veg and set to one side
Cook the noodles according to the packet instructions then cool in cold water and set to one side
Mix the sauce ingredients in a bowl and set aside
Get a pan nice and hot, add the rapeseed oil and drop in the carrots, broccoli, onions and mushrooms. Fry for 5 minutes, stirring regularly
Add the noodles and sauce to the pan and mix in with the vegetables
Fry for another 2 - 3 minutes, stirring regularly (Check that the noodles are hot, if not fry for another minute or two)
Serve in bowls and drizzle a little sesame oil over the top to finish
