Strawberry, Goats Cheese & Basil Salad with a Balsamic Dressing

The sweetness of the strawberries complement the acidity of the balsamic dressing perfectly, and the fresh basil leaves add another layer of complexity to this unusual but tasty side. Ingredients


For the Salad


2kg Fresh Strawberries, with the Stem removed and the strawberry halved

Small bunch of fresh basil, finely chopped

300g soft goats cheesed, crumbled


For the Dressing


3 tablespoons rapeseed oil

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 tablespoon runny honey

1 pinch of salt

1 pinch of pepper


Instructions

  1. Combine the dressing ingredients in a bowl and whisk well, set aside until ready to assemble to salad

  2. Combine the dressing with the salad ingredients in a bowl and mix well.

  3. Serve!
